The rock oyster (Crassostrea gigas)grows wild in the River Blackwater and is available to buy all year round. These UK oysters are almost rock-like in shape and, because they filter a lot more water than their Native counterpart, is saltier in flavor.

Determining the freshness and safety of rock oysters is crucial before consumption. A live oyster will have a tightly closed shell or will slightly close when tapped; this is a good sign that it's alive and safe to eat. If the oyster shell is open and does not close when tapped or prodded, it's likely dead and could harbor harmful bacteria, making it unsafe for consumption. Furthermore, upon shucking, if the oyster's flesh has an unpleasant or sour smell, or if it's discolored and dry, it is not fresh and should not be eaten. Fresh, safe oysters will have a clean, briny, sea-like aroma and moist appearance.

What You'll Need:

  • Fresh Celeplate oysters
  • An oyster knife (a specialized, sturdy, short-bladed knife)
  • A thick cloth or glove for holding the oyster
  • A small brush
  • Lemon wedges, mignonette sauce, hot sauce, or other preferred condiments
  • Ice (optional, for serving)

Instructions for Opening Oysters:

  1. Clean the Oysters: Before you start, scrub the oyster shells with a small brush under cold running water to remove any dirt or debris. It's essential to start with clean oysters to enjoy their fresh, briny flavor.
  2. Prepare Your Space: Lay a thick cloth on a flat, sturdy surface. The cloth will stabilize the oysters as you shuck and protect your hand.
  3. Hold the Oyster: Place the oyster cupped-side down on the cloth, with the hinge (pointed end) sticking out toward you. Use the cloth to hold the oyster in place, ensuring your hand is protected.
  4. Insert the Knife: Hold the oyster knife in your dominant hand and insert the tip into the hinge. It would be best if you wiggled it in with a little force. The goal is to pop the hinge open, so be patient and apply controlled pressure.
  5. Twist to Open: Once the knife is securely in the hinge, twist the knife handle with a quick motion to pry the shell open. You should feel a slight give.
  6. Slide the Knife: With the shells slightly parted, slide the knife under the top shell, cutting through the muscle that holds the shells together. Be careful not to spill the oyster's juices or damage the meat.
  7. Remove the Top Shell: After cutting the muscle, remove the top shell, revealing the oyster inside.
  8. Free the Oyster: Run the knife underneath the oyster to detach it from the bottom shell, making sure it's free and clear to be slurped up.

How to Enjoy Raw Oysters:

  1. Prepare Your Toppings: While purists may prefer oysters plain to savor their natural flavor, others enjoy a squeeze of lemon, a dash of hot sauce, or mignonette sauce (a mix of minced shallots, vinegar, and pepper).
  2. Serve Immediately: Oysters are best enjoyed fresh, so serve them immediately after shucking. You can present them on a bed of ice to keep them chilled.
  3. Savor the Experience: Pick up the shell, ensuring you've loosened the oyster, and bring it to your lips. Slurp the oyster from the wider end—it's common to sip the briny liquid (known as the liquor) before or as you eat the oyster.
