The rarity and high price of Beluga caviar are attributed to several factors. One of the primary reasons is the extended maturation period of the Beluga sturgeon. It can take up to 20 years for a female Beluga sturgeon to mature and start producing eggs, and when it does, the number of eggs produced is fewer compared to other sturgeon species. These factors contribute to its scarcity and exclusivity.

Caviar is generally considered a luxury due to its limited availability, labor-intensive harvesting process, and high pricing. The delicate eggs, ranging in color from light gray to black, are reserved for the most special occasions, offering a uniquely indulgent tasting experience. Caspian Sea sturgeons, particularly the Beluga sturgeon, are highly regarded for producing the best caviar in the world.

In 2005, the U.S. Fish and Wildlife Service implemented strict regulations to protect endangered species, making it illegal to import wild Beluga sturgeon and pure Beluga caviar into the United States. Consequently, "Beluga Hybrid" and "Kaluga Hybrid" caviar from farm-raised sturgeons emerged as alternatives to the highly coveted pure Beluga and Kaluga caviars.
