Our finely selected Irish Wagyu beef, sourced from a new premium supplier, brings a deeper level of marbling and flavour to your hotpot table. These cattle are finished with a chocolate fed diet for the final 150 days before harvest, a specialised method that enhances fat distribution and creates beautifully even marbling. When cooked, the marbling melts gently into the meat, giving every slice a soft buttery aroma and a rich juicy finish.

Thinly sliced at 1.5 mm, each cut is designed to highlight the natural fibres of Irish Wagyu. The texture is tender yet structured, ideal for Japanese style shabu, Korean style hotpot, or Chinese style broth based cooking. It cooks quickly, stays tender, and never tastes dry.

About the Cut

Wagyu slices are taken from well balanced parts of the carcass where the meat and fat naturally integrate, creating the signature Wagyu look. Unlike leaner cuts, Wagyu typically carries a higher level of intramuscular fat, which forms its famous marbling. This marbling usually ranges from fine to medium rich, allowing the fat to melt quickly when heated. As it melts, it blends into the meat and creates a soft buttery aroma, a round mouthfeel and a tender bite that stays juicy from start to finish.

Flavour and Texture

The marbling is fine and evenly spread, melting smoothly as soon as it touches the heat.
The aroma is buttery and slightly sweet, with the natural richness of Wagyu beef.

The texture is tender, juicy and full of flavour, with muscle fibres sliced across to enhance softness.
Each slice is pre sliced to around 1.5 mm so it cooks in seconds, making it ideal for hotpot, shabu and quick stir fries.

Western Use

In Western cuisine, premium cuts of meat are often enjoyed grilled, roasted, or slow cooked to highlight their natural flavour and tenderness. For a quicker option, thin slicing allows the same rich taste to be enjoyed within minutes, perfect for everyday meals.

East Asian Preparation

East Asian cooking celebrates thinly sliced meat for its tenderness and versatility.

Whether for Japanese shabu shabu, Korean style beef or pork hotpot, or Chinese style broth, thin slices cook instantly and absorb the flavours of the soup base.

They pair beautifully with dipping sauces like sesame, soy, or chili oil, and can also be used in quick stir fries, noodle soups, or rice bowls.

Some classic examples include tomato beef soup, golden broth beef, Japanese gyudon, Korean bulgogi rice, and spicy noodle dishes topped with tender meat slices.
