Beef omasum tripe, also known as beef bible tripe, comes from the third stomach of a cow, called the omasum. Unlike honeycomb tripe, which has a spongy texture, omasum tripe consists of thin, layered folds that look like the pages of a book.

This unique structure gives it a crisp, slightly chewy texture that remains firm even after cooking. Because of its delicate layers, it does not need long cooking times like other types of tripe and is best prepared through quick-cooking methods.

Unlike other types of tripe, omasum tripe is not suitable for slow cooking or stewing. Instead, it is best prepared using quick-cooking techniques that preserve its signature crispness:

Blanching (Essential First Step)

Before using beef omasum tripe in any dish, it must be thoroughly cleaned and blanched in boiling water for 5-10 minutes. This helps remove any impurities while maintaining its firm yet tender bite.

Hot Pot

One of the most popular ways to enjoy omasum tripe is in Chinese hot pot, where it is sliced thin and quickly dipped into boiling broth for a few seconds to a minute. The result is a crisp, slightly chewy texture that absorbs the flavors of the soup while keeping its original structure.

Stir-Frying
