Farming allows a reliable supply of even-sized legs and avoids the unpredictability of wild capture, while also ensuring that the product meets international food safety standards. The legs are quick frozen immediately after preparation to preserve their delicate texture and natural sweetness, and are packed without added glaze so that every portion reflects true meat weight.
