Unlike mature beef cattle, these young bulls are processed at an earlier stage—around 15 months of age—striking the ideal balance between youthful tenderness and full-bodied beef flavour. The cattle are predominantly grain-fed, resulting in a consistent marbling that enhances both juiciness and pan-searing performance. This feeding regime also contributes to a cleaner, sweeter beef taste, without the overwhelming gaminess often associated with older animals.

Raised in temperate regions of northern Spain, the calves benefit from a low-stress environment, roaming freely in open air farms with ample space and access to natural light. These conditions foster healthy growth and a supple meat texture that responds beautifully to quick, high-heat cooking.
