为了确保最佳的口感,海胆对“新鲜”有着极高的要求。它的海胆黄在开壳后若不及时食用,会因生物酶的作用逐渐分解,出现“自溶”现象。因此,最新鲜的活海胆无疑是最受欢迎的。市场上除了新鲜开壳的海胆,还有盐水浸和木盒包装等其他形式的海胆产品,但都无法比拟活海胆的极致口感。
