牛百叶是牛的第三个胃——瓣胃(omasum),属于反刍动物的消化系统。因为表面拥有如书页般层层堆叠的褶皱,也常被称作“毛肚”或“百叶”。牛百叶呈灰白色,表面有多层薄而细密的折叠,质地紧实。生的牛百叶触感偏硬,但经过适当烹煮后,会变得柔软又带嚼劲,保留清脆爽口的质感。
由于牛百叶为生鲜原料,未经处理时质地坚韧,因此建议先以小火炖煮30–40分钟使其软化。加热与炖煮可分解胶原与结缔组织,让牛百叶在熟化过程中达到“软中带脆”的理想状态。这种处理方式,最适合用于火锅、热炒与凉拌等东亚风格料理中。
