為了確保最佳的口感,海膽對「新鮮」有著極高的要求。它的海膽黃在開殼後若不及時食用,會因生物酶的作用逐漸分解,出現「自溶」現象。因此,最新鮮的活海膽無疑是最受歡迎的。市場上除了新鮮開殼的海膽,還有鹽水浸和木盒包裝等其他形式的海膽產品,但都無法比擬活海膽的極致口感。
