牛小排(Short Rib)位于牛胸腔部位,其肌肉纤维原本较为粗壮。横切(Flanken-cut)将原本平行的长肌肉纤维切断为短纤维,这在物理层面上降低了咀嚼难度。暴露出的三颗圆骨截面在受热时会向周围释放骨髓油脂,配合切断的短纤维结构,能让热力更均匀地渗透。相比传统整块炖煮的切法,横切牛小排在快速香煎时,其脂肪(油花)能够更迅速地达到焦化状态,产生浓郁的肉香。
