经过长时间炖煮后,双层腩中的筋膜会逐渐分解为软糯的胶质,使肉质变得松软多汁。双层腩具有三肥七瘦的黄金肥瘦比例,其中恰到好处的脂肪,在炖煮过程中会变得软烂细腻,融入汤汁中还能增加炖菜的浓郁风味。
推荐使用普通锅炖煮90分钟以上,或使用高压锅炖煮45分钟以上,以达到软烂细腻的口感。
