牛小排(Short Rib)位於牛胸腔部位,其肌肉纖維原本較為粗壯。橫切(Flanken-cut)將原本平行的長肌肉纖維切斷為短纖維,這在物理層面上降低了咀嚼難度。暴露出的三顆圓骨截面在受熱時會向周圍釋放骨髓油脂,配合切斷的短纖維結構,能讓熱力更均勻地滲透。相比傳統整塊燉煮的切法,橫切牛小排在快速香煎時,其脂肪(油花)能夠更迅速地達到焦化狀態,產生濃郁的肉香。
