The shell of the Scottish native blue lobster has a beautiful dark blue color, making it visually striking and appealing. Live lobsters retain their optimal taste and texture, as they are alive until they are prepared for cooking.

    Hot to prepare live lobster

    1. Urination Cleaning: Place the lobster belly-up, lift the tail, and use chopsticks to insert into the body from the base of the tail, pulling out to release any foul-smelling liquid. This step removes substances that may affect the taste.
    2. Cutting Preparation: Wrap the lobster's tail with a towel for a firm grip, then use a sharp knife in your right hand to insert from the head to the tail, slicing the lobster in half along the dorsal midline.
    3. Removing the Innards: In the halved lobster, locate the gastrointestinal tract line behind the eyes and remove it to ensure the meat is pure and free of impurities.

    Cut & cleaned: Leave the hassle of cleaning seafood to us! We will meticulously clean, and prep live lobster in halves and crack claws for your convenience. The brown meat and other by-products will be packed separately and delivered blast freeze to maintain freshness and cleanliness.
