Fresh Spot Grouper 斑点石斑鱼

In the vast expanse of the ocean, there exists a category of fish collectively referred to as groupers. Over 100 varieties have been documented, with 67 species from 10 genera found extensively along China's southeast coast, the Gulf of Tonkin, and the Spratly Islands.

Much like the old saying, 'every dragon has its unique offspring,' within the grouper family, some display vibrant colors and exquisite patterns, some are demure with gentle hues, while others possess peculiar appearances and aggressive dispositions. Despite the different looks and temperaments under the same moniker, all are undeniably delicious.

The grouper, scientifically known as Epinephelus drummondhayi, belongs to the order of Perciformes, suborder of Percoidei, family of Serranidae, and the grouper genus. They predominantly inhabit tropical and subtropical warm waters.

This fish is characterized by its long, slightly flattened, oval-shaped body and a large mouth with sharp teeth, some of which can even resemble canine teeth. Renowned for its rich nutrients, the grouper's meat is delicately tender and pure white, offering an unparalleled taste experience. It's a premium edible fish, boasting low fat and high protein content.
